The World's Most Easiest Scones

  It's time for high tea! Let's make the easiest scones in the world!




Good with a dollop of jam, whipped cream, and a cup of tea
Scones

Ingredients
  • 150ml milk
  • 150ml cream
  • 1 egg
  • 3 cups self raising flour
  • 3 tblsp sugar
  • zest of one lemon


Method (preheat your oven to 200 degrees Celsius)

  1. Mix the wet ingredients together.
  2. Mix the dry ingredients together and add to the wet mixture.
  3. Bind in the bowl with your hands and when bound, (do not over mix it otherwise they won't rise) roll out with a rolling pin until 2-3 cm thick.
  4. Cut out the scones with a round cookie cutter and place on a baking tray.
  5. Make a glaze with a small amount of water with 1/3 the amount of castor sugar and dissolve. then< take a pastry brush and brush it on the scones.
  6. Bake until golden brown (sorry, I wasn't given the times)

Banana Cake

Hi there!

  I have seen the poll and have answered your requests, so, without further a do, here is the recipe for my mom's famous Banana Cake.


Banana Cake

Ingredients


  • 3 or 4 ripe bananas
  • 1/3 cup butter, softened
  • 1 egg, lightly beaten
  • 1 cup sugar (brown or white)
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1 1/2 cups cake flour



Method (preheat your oven to 180 degrees Celcius)


  1. Mash the bananas with a fork and mix with the butter.
  2. Ad sugar, egg, vanilla essence and baking soda and mix together.
  3. Add the flour and fold.
  4. Pour the batter into a small, greased loaf tin and bake for 1 hour.
  5. When cooled on a rack, serve with some butter and enjoy with any breakfast beverage.

Peanut Butter Cookies



  This recipe might have been found on the side of a cereal box, but I'm telling you, it is the best recipe in the history of baking!  I have only made this recipe once, but, I am already in love with it.
  Okay, enough jabber.  Let's bake!



    Peanut Butter Cookies


Ingredients

Delicious with a glass of milk!
  • 250g butter
  • 2 cups sugar
  • 2 eggs whisked
  • 125ml peanut butter (you can add more for than real peanut butter taste if you want)
  • 2 tsp bicarbonate of soda
  • 25ml milk
  • 1 tsp vanilla essence
  • 2 cups rolled oats
  • 2 cups coconut
Method
  1. Cream butter and sugar.
  2. Add whisked egg.
  3. Add peanut butter and mix well.
  4. Dissolve bicarbonate of soda in milk and add the vanilla.  Put in to butter and sugar mix and stir.
  5. Mix in the rest of the ingredients.
  6. Scoop desert spoon size balls of batter and lay it on a greased tray and flatten slightly with a fork.
  7. Bake for 10 - 15 minutes in a 180ยบ oven and leave to cool on a cooling rack.
  8. Enjoy with a glass of milk!

Shortbread

Shortbread

Ingredients
115g plain flour
55g cornflour
55g castor sugar
115g butter diced and extra for greasing

Method
Preheate oven at 160c.
Grease a tart tin.
Sift both flours into a large bowl. Stir in the sugar, then add the butter and rub in with your fingers until it starts to bind into a dough. Turn into the tart tin and press evenly into the base of the tin. Bake for 35-40 minutes.

Flapjacks!

I always make these for breakfast at sleepovers or when friends come over.  We all get stuck in and stuff ourselves with these delicious things!

Flapjacks

Ingredients
1 cup self-raising flour
2 tbsps castor sugar
1 cup milk
1 egg
65g butter, melted
Serve with butter and golden syrup, and even a little whipped cream.
Method
Step 1: Sift flour into a bowl.  Stir in sugar.
Step 2: In a separate bowl, wisk together milk, egg and 50g of the butter until combined.  Gradually add to to flour and sugar, whisking until smooth.
Step 3: Heat a large non-stick frying pan on a medium heat.  Pour a little of the remaining butter in pan and spread evenly.
Step 4: Drop spoonfuls of the batter into the pan and fry until bubbles appear on the surface.  Flip and cook for 1 minute.
Step 5: Repeat until batter is done, adding a little more butter to the pan each time.

Honey and Oat Muffins

This is something that I really like.  I used to make these on Saturday mornings and sell them around the neighborhood to get a little extra pocket money!




Honey and Oat Muffins makes 12


Ingrediants
2 ½ cups self-raising flour, sifted
1 cup castor sugar
1 cup rolled oats (normal porridge oats)
90g butter
¼ cup honey
1¼ cup buttermilk (You can easily make a buttermilk substitute with 2 tablespoons milk plus enough plain yogurt to equal one cup. Stir to combine and then use your as recipe instructs.)
1 egg, beaten

Bonus: Its healthy too!

  

Method
Step 1: Preheat oven at 180°.  Combine flour, sugar and ¾ cup of the oats.
Step 2: Melt butter and honey together in a small sauce pan on a low heat.
Step 3: Spoon into muffin cases and sprinkle remaining oats.  Bake for 20-25 minutes.

Chocolate Brownies

Mmmmm!!! I love chocolate brownies.  They can be served just as it is for a snack or warmed up with a drizzle of cream for a rich dessert. .

A sifting of icing sugar is a nice touch

Ingredients
250g butter
2 cups sugar
2 eggs
1/2 tsp vanilla essence
250g flour
1/2 cup cocoa powder
1/2 tsp salt
1/2  cup coconut

Method
Preheat oven to 180 c.  Slowly melt butter and sugar in a pot and when done, set aside to cool.  Next, beat the eggs and vanilla together.  Sift cocoa, flour and salt.  Stir in coconut,  butter mix and egg into the dry ingredients.  Spread evenly into a greased about 18x13cm dish until about 3cm's thick. Bake for 35 mins.  When cooled, sift icing sugar over for a nice presentation.  Enjoy!
